The idea of grinding your own flour sounds like it adds a lot of time or effort, but the truth is—it doesn’t. Once you learn the basics, it becomes just another easy, seamless step in your baking routine.
Why Freshly Milled Flour?
I’ve been diving deeper into whole-grain baking with the help of Sue Becker’s cookbook, and it has opened up an entirely new world for me. She simplifies the process and explains the why behind freshly milled flour. And honestly, after tasting the difference, I don’t know if I can go back!
Freshly milled flour:
retains all the nutrients, oils, and fiber
hasn’t been sitting on a shelf for months
tastes fuller, richer, and more wholesome
provides more natural vitamins
helps create fluffy, nourishing baked goods

All you really do is:
Pour the grains into the hopper
Turn on the mill

The Muffins: Simple, Cozy, and Perfectly Fall
Using freshly milled flour for my apple cinnamon muffins elevates them to the next level—soft, fragrant, and naturally sweet. The combination of apples, warm spices, and fresh flour creates a muffin that tastes real, wholesome, and fully satisfying.
Plus, they are perfect for breakfast, snacks, or gifting. They make your house smell incredible, too!

Apple Cinnamon Muffins with Freshly Milled Flour
Ingredients:
2 1/4 cups freshly milled flour (hard white wheat works beautifully)
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup melted butter or coconut oil
1/2 cup honey or maple syrup
1 eggs
1 cup chopped apples (peeled or unpeeled)
1/2 cup milk (I used buttermilk)
1 tsp vanilla extract
Instructions:
Preheat oven to 350°F. Line a muffin pan or grease lightly.
Mill your flour using your Nutrimill.
In a bowl, whisk dry ingredients: flour, cinnamon, baking powder, baking soda, and salt.
In a separate bowl, combine butter/oil, honey/maple syrup, eggs, milk, and vanilla.
Add wet ingredients to the dry mixture and stir until just combined.
Fold in chopped apples gently.
Divide batter into muffin cups.
Bake 18–22 minutes or until the tops are golden and a toothpick comes out clean.
Cool and enjoy warm!
